You have to try this sheet pan shrimp fajita dish! It’s healthy and delicious and it makes weekday meals so simple!
To make it: First, preheat your oven to 400 degrees. Second, Cut peppers and onions into thin strips and add to a bowl with your raw shrimp. I buy frozen shrimp and let it thaw because I find its easier to store. Then, add juice from two limes, some avocado oil, spices of your preference and toss. Traders Joe’s has a chili lime seasoning that went absolutely perfectly with this meal! Cook in oven for 10-12 mins and that’s it, you’re all done! And clean up is a breeze!
You can eat this as filling for tacos, burritos, taco bowls, on top of salad or just alone-it’s that good!
