This easy hands off soup is a perfect lunch or dinner! It’s also great to make as a precursor to your thanksgiving dinner! It’s simple and filled with healthy ingredients that scream fall and cozy vibes. Enjoy!

 

Ingredients:

  • Garlic
  • Onion
  • Butternut squash
  • 1 apple
  • Leftovers seasoning (from Trader Joes)
  • Rosemary
  • Salt
  • Cinnamon
  • Pumpkin seeds
  • 32 oz chicken or vegetable stock

 

Directions:

  • Preheat oven to 350 degrees F
  • Roast garlic, onion, butternut squash, & 1 apple in olive oil, everything but the leftovers seasoning, salt & rosemary for 45 mins.

  • Add all the roasted ingredients to a blender with 32 oz of chicken or vegetable stock and cinnamon. Blend until smooth.

  • Top with cinnamon and pumpkin seeds. Enjoy!
