Fish Tacos!

Fish tacos are my favorite type of taco! This was the first time I made fish tacos and they came out so good! I think the game changers were charring the corn tortillas on the stove top and the homemade aioli. I used frozen cod for this recipe but I think any white firm fish would do. This was also surprisingly quick and simple to put together.

This was one of the first times I made fish, and definitely the first time I made fish that wasn’t salmon. And it was amazing! Honestly one of the best things I’ve ever made. Quick and easy, you should make this asap!

Ingredients:

  • 4 5 oz thick pieces of skinless white firm fish fillet (such as grouper, bass or halibut)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon salted butter
  • 1 cup red bell pepper chopped
  • 1/2 cup mushrooms chopped
  • 5 cloves garlic minced
  • 9 ounces fresh baby spinach, from two bags
  • 2 ounces 1/3 less fat cream cheese
  • 1/4 cup half and half cream
  • 3 tablespoons grated parmesan cheese
  • himalayan salt
  • black pepper
  • crushed red chili flakes

Directions: in a large skillet over medium heat add 1/2 tablespoon olive oil and 1/2 tablespoon butter, mushrooms and red bell pepper and cook for about 4 minutes. Add spinach and season with a spinach of salt and pepper mix until thee spinach welts down. Add cream cheese, half & half and parmesan cheese. Mix until cream cheese melts down mixture resembles creamed spinach. Heat a separate skillet on medium high heat, add remaining oil and butter. Season fish on both sides with salt and pepper and place on a hot pan. Cook 6 minutes on first side and flip fish over and cook for 5 minutes until cooked through and browned. Divide the spinach mixture on the bottom of each plate and top with piece of fish.

Sweet Potato and Carrot Treats

Ingredients:

  • 2 large cooked sweet potatoes
  • 1 cup organic rolled oats
  • 3 tablespoons coconut oil, melted
  • 1/2 cup of chopped shredded carrots

Directions:

Mix all ingredients together until well combined. Form into balls or {mold into shapes for more fun) and place on parchment lined baking sheet. Bake at 375F for 35 minutes. Let cool before moving.

As you can tell from the pictures, these treats were quickly Rory approved!

Sweet Potato Dog Treats

Sweet Potato Dog Treats

I love making healthy treats for our puppies. And I think the dogs like it as well! We do buy store brought treats for them as well but I prefer to know what ingredients are going into my dogs food whenever possible.

So I threw together some puppy safe ingredients and the dogs loved it. Although these treats are safe when giving in moderation (like any treat) I am not a veterinarian and you should always do your own research before feeding to your pooch.

Directions: cook two sweet potatoes in the oven until soft. I usually cook mine at 400F for 30-45 mins depending on the size of the potatoes. Set the cooked sweet potatoes aside and let them cool. While the sweet potatoes are cooling, mix 1 cup of coconut oil with 2 cups of raw oats and 1 egg. Mash the two sweet potatoes with a fork and then mix them with the other ingredients. After fully mixed, shape the treats into cookies (or use a fun cookie cut out) and place are parchment lined oven trey. Bake at 350F for 15 mins or until the edges start to brown. Let cool completely before moving.
