Feta Pasta

This viral feta pasta recipe did not disappoint! It’s delicious and so simple! I added grilled chicken and spinach for more veggies and protein. I will definitely be making this again! It’s an extremely simple way to make your own fresh pasta sauce while expending minimal time and energy. Next time I make this I’m going to add honey to the feta before baking it, I think that will add an extra element to the dish. Your measurements do not have to be exact here, if you use 16 or 10 oz of tomatoes that’s fine and if your block is a little more or less than 10 oz that is fine also, it’ll taste amazing!  

 

Ingredients:

  • 14 oz Cherry tomatoes
  • 10 oz Block of feta
  • Olive oil
  • Salt
  • Oregano
  • Pepper
  • Crushed red pepper flakes
  • Pasta
  • Spinach
  • Grilled chicken
  • Chopped fresh basil
  • parmesan cheese

 

Directions:

  • Preheat oven to 400F
  • In an oven safe dish place the cherry tomatoes and block of feta. Drizzle the tomatoes and cheese with olive oil. Add your spices. Bake in oven for 35 minutes.
  • Cook pasta according to direction on the box. 1 minute before you’re about to drain the pasta add your fresh spinach to the pot. Drain pasta and spinach.
  • Take tomatoes and cheese out of the oven and mix them together.
  • Combined tomato and feta mixture with grilled chicken, chopped basil, spinach, and pasta. Mix well and top with parmesan cheese! Enjoy!
