Healthy Banana Apple Muffins
I made these on a whim because we had an abundance of frozen bananas in our freezer and they came out amazingly! They’re super fluffy and super moist at the same time.
Ingredients:
- 4 Thawed frozen bananas
- ½ cup whole wheat flour
- ¾ cup almond flour
- ¼ cup coconut flour
- ¼ cup oats
- 1 large egg
- ¼ cup maple syrup
- ¼ cup coconut oil
- ½ cup chocolate chips (I like dark chocolate)
- 1 large apple
- ½ tblsp butter
- 1 tbls vanilla
- 2 tblsp cinnamon
- 1 tspoon baking powder
- Salt
Directions: Pre heat oven to 375 degrees F. Mash bananas with a fork. Cut apple into small squares. Melt ½ tblspn butter and 1 tblspn coconut oil in small frying pan. Add apples pieces to pan with 1 tblspn cinnamon. Cook apples on low heat until they’re soft (about 10-15mins). Whisk dry ingredients together. Add all other ingredients to dry ingredients including cooked apples. Line muffin tin with muffin liners. Fill muffin liners up ¾ of the way. Cook for 25 minutes.
I realize these have a lot of ingredients specifically a lot of different flours but I was just messing around in the kitchen while in quarantine with ingredients I had on hand and loved the result so I figured I’d share! Enjoy and let me know if you try them!
