This Orzo Salad is great for an August BBQ! You can eat it warm, but I personally love it chilled. This dish is great because you can make it the day before, let it chill in the fridge overnight and bring it to a summer party!
Ingredients:
1 Bag Orzo
3 Chicken Breasts
12oz Jar of Quartered Marinated Artichokes (I used Trader Joes quartered marinated artichokes)
1 Chopped Orange Pepper
1 15oz Can of Chickpeas
1 Handful of Spinach
Feta Cheese
Juice from One Lemon
Olive Oil
Oregano
Garlic Salt
Pepper
Directions:
Cook one bag of orzo according to the directions on the box. Drain and set aside to cool.
Chop three chicken breasts into large chucks and sauté them in a large pan with Olive Oil, Oregano, Garlic Salt and Pepper until cooked thoroughly.
Add chopped orange pepper to pan and cook until soft.
Add cooked orzo, drained chickpeas, spinach, and the entire jar of artichoke hearts, marinate and all, to pan. Mix.
Add feta cheese, lemon juice, olive oil and more Oregano to taste. Mix.
