Lyss’ Orzo Salad

This Orzo Salad is great for an August BBQ! You can eat it warm, but I personally love it chilled. This dish is great because you can make it the day before, let it chill in the fridge overnight and bring it to a summer party!

 

 

Ingredients:

  • 1 Bag Orzo
  • 3 Chicken Breasts
  • 12oz Jar of Quartered Marinated Artichokes (I used Trader Joes quartered marinated artichokes)
  • 1 Chopped Orange Pepper
  • 1 15oz Can of Chickpeas
  • 1 Handful of Spinach
  • Feta Cheese
  • Juice from One Lemon
  • Olive Oil
  • Oregano
  • Garlic Salt
  • Pepper

 

 

Directions:

  • Cook one bag of orzo according to the directions on the box. Drain and set aside to cool.
  • Chop three chicken breasts into large chucks and sauté them in a large pan with Olive Oil, Oregano, Garlic Salt and Pepper until cooked thoroughly.
  • Add chopped orange pepper to pan and cook until soft.
  • Add cooked orzo, drained chickpeas, spinach, and the entire jar of artichoke hearts, marinate and all, to pan. Mix.
  • Add feta cheese, lemon juice, olive oil and more Oregano to taste. Mix.
  • Enjoy!
