Breakfast Tacos!

These breakfast tacos are what dreams are made of. They look fancy but are simple to make, which is my favorite type of meal. The charred corn tortilla is a game changer 🙌🏼.

Ingredients:

  • Corn tortillas
  • Gas stove top, or some kind of open flame to chare the tortillas
  • Peppers and onions cut into long stripes
  • Avocados
  • limes
  • Eggs
  • Coconut oil

Directions:

To make these tacos, char your corn tortillas on an open flame like a gas stove top. Use tongs to flip the tortillas over the flame. Once the tortillas develop black char marks they are done!

Sautéed peppers and onions in coconut oil until they are soft.

In a pan, cook your eggs sunny-side-up ☀️.  Use a tablespoons of coconut oil in the pan to prevent them from sticking to the pan. I like my eggs to be runny.

In the taco, add your veggies on top of the mashed avocado and your egg on top of the veggies!

A side salad pairs perfectly with these tacos and adds some more veggies! This is such a nutritious & satisfying meal that I’ll be making on repeat in my house! Enjoy! Let me know if you tried them out!
